Project description
In industrialised countries, foodborne illness of microbial origin is considered the most serious food safety problem of which Salmonella spp. are the most costly one. Newly introduced regulations and prevention strate-gies should be based on a risk assessment to avoid too expensive or less effective measures. To control food-borne risks that can cause illnesses, like salmonellosis, the total supply chain has to be included because the several farm and firm stages of the chain are linked vertically and horizontally. They exert influence on each other's product quality and safety and economic performance.
A simulation model is written to get more insight in the economic and epidemiological consequences of different chain strategies and measures per stage with respect to Salmonella reduction and prevention.
